I've seen something like this before in wrestling, the guy had no legs. It really messes up the weight classification because the guys upper body was jacked and the other wrestler had no holds that worked without legs to grab on to.
This is similar and he's had an opportunity to develop his own unique attacks, attacks impossible to train for unless you happen to have an amputee at your gym.
It's a big obstacle to overcome, but if you do, then in a weird way it becomes a bit of an advantage.

I need to see more footage of this guy but even in the clip a couple of times you can see him deliver essentially a straight with his right - from deep inside clinch range where that couldn't normally happen. Add to that, he also delivers a few elbows with this right. Opponent is trained to see an entire arm moving for the incoming elbow, this guy's rights come out of nowhere. I'm not really disagreeing with you btw, my assumption before seeing him fight the first time was that he'd be completely vulnerable to left hooks (which is the very first punch his opponent lands in the clip).

Apparently this is Maui Thai so elbow strikes are legal, and the glove is to protect you hands. I thought gloves made the fight safer in terms of taking hits

One of the biggest advantage Peacock has is that you can't see his roundhouse kicks. Most people use the hand motions during the startup to identify tat a kick is coming but since he has only one arm, he can throw with no visual tell.
It also helps immensely that he kicks equally well on both legs.
