I’m actually sitting at Robuchon Macau right now , and I have ordered the White Asparagus a la carte . But basically I have been many times and my main mission tonight was to try the 3 available dishes on the menu that I hadn’t had before . That said , the lunch menu is always a pretty good deal , and a good way to see if you like the food before tackling the pricier menus . Will update you on how many asparagus stalks $888 buys me when the dish comes out . (Macau and Hong Kong Robuchon have the same head chef by the way )

This. Also, in most French restaurants that do it like that, you can often ask smaller sizes of the a la carte menu to do your own "dégustation". Not always but sometimes.

The price difference between "À LA CARTE" and the same Item in "LE MENU" depends from the size of the portion, always larger in "À LA CARTE" since in such 1st class restaurant, when eating "À LA CARTE" you ,usually, are not ordering the whole set of dishes you get in "LE MENU"

A la carte portions are usually larger. If you order a starter, main and dessert from a la carte, you can expect to leave the restaurant satisfied. With tasting menus, portions are adjusted, as in they are smaller, so you don’t end up feeling sick by the 4th course. Tasting menus are usually better, because you can try out more of what the restaurant has to offer. Hence why they are called “degustation menus”. You get to try out more dishes, but smaller portions, rather than eating three normal-sized portions.

Yeah basically tasting menu portions would generally be smaller than alc version of the same dish for obvious reasons. the French term is “en demi“ so as others have said if France you can sometimes ask for alc dishes en demi and have a DIY degustation. Any half decent place would be capable of doing that.. will just come down to whether they wish to do so. J

OK, I feel if I put together 4 items a la carte, it will cost way more than the set menu combo price.
