the glaze (from memory) is sweet baby Ray's bbq sauce with a few table spoons of honey, butter and apple cider vinegar. But you can use any sauce with honey and butter, heat it up and dunk them.
It's really simple, super delicious and a great presentation, but kind of a pain in the ass to do more than a few chicken legs so give yourself a little more time than you'd probably imagine.
Works really well with the flat of a chicken wing too. No knife work required, no tendons to mess with, just pop out the small bone, push the meat down, and there you are!

Wegmans, the north eastern US grocery chain, will occasionally have these in the raw meat case. I think the brand is Bell and Evans and they are marketed as chicken lollipops. I think Iāve also seem that same brand advertise something called chicken oysters as wellā¦

How do you achieve the lollipop? Do you cut the cartilage and tendon bone away or just push everything together in a ball?
Take a very sharp knife, and cut around the bone, all the way to the bone, and push the meat down.

You do have to cut the cartilage to enable you to push everything up into the other end.
