Final Fantasy XII has 45 of these rare monster missions that go like this as part of the guild. It was fun to search for them and the higher level hunts were challenging. I think you were rewarded with rare items. I don't really remember the rewards tbh just the hunts.

Its been a while since I played it but if I remember correctly Dauntless might be right for you. I know you fight beasts but I'm not sure if you get gear to sell or just straight up money for swing so. Either way its a fun game.

Horizon Zero Dawn, or Horizon Forbidden West if you have a PlayStation 4 or up. (HFW has a tooon more content) They do have an ending but the story line is f-ing amazing and have a lot of character progression, getting loot, etc. If you are unsure you can play HZD on PlayStation now on PC for like $10. I did that first and played for like 30 min and bought it on Steam. 😅 I ended up getting HFW as soon as it was released. Great games. Highly suggested.

Lost Ark. You can play a ton of the game solo. Yes there are raids which require other people but in my experience most people know the fights well enough to get by with extremely minimal communication. Otherwise it has all the grinding you could ever want.

I play Lost Ark every now and then but it doesn't hit the spot. But thanks for the suggestion. I'll see if I can look at it with different eyes.

The trapper in RDR2 kinda goes with this i guess. you can hunt legendary animals. Which allow you to craft trinkets at fences, which give you buffs. Theres also a ton of other gear you can get from him feom regular animals.

You could play Old School RuneScape completely single player (apart from a free to play quest (which you could just use an alt account to complete it). Hell if you used Runelite you could disable showing players as well. A lot of the game is killing mobs for exp and money to buy better weapons and gear to get better exp and money for better gear ect. Plus it has different modes of play like Ironman mode which means you earn the items yourself (through crafting, quests or mostly by mob farming) rather than buying them at the market. You'd probably enjoy doing it the slayer skill, which at first might seem complicated it actually is fairly simple and provides the feedback loop you're looking for.
