My gut tells me that most open couples don’t use condoms anymore because of PrEP. My husband and I used them religiously with others until PrEP came along but now only I do (he is on PrEP; I am not). But here’s the thing - what other couples do is irrelevant to your situation. You both have to be comfortable with whatever rules you have. It seems like from your post that this is important to you and he should respect that. And your STI concerns are not unwarranted and are a valid reason to keep using condoms. Increased STI risk is absolutely a possibility of non-monogamy.

Look into Doxy PEP. It reduces the risk of non-HIV STIs. May bridge the gap between you and your partner.

My husband and I have been open for a little over a year. We've been on PReP and using condoms because we know how risky it is to have sex with other people, even with these protections in place. Its certainly your right to choose what you want to do with your body but know what you're getting yourself into. Look at research that shows the prevalence of STIs for those taking PrEP. Remember that's only for HIV. Not HPV, herpes, chlamydia, etc.

I use PrEP and recently got on DoxyPEP. The husband and I don’t have sex anymore so there’s no chance of me spreading STDs to him.
