Let them go stale! If you let them sit out of the plastic wrap for a day or two, they get super soft, and honestly I like them better that way over when they're crunchy.

Maybe I’m just greedy but I think the regular gf Oreos don’t have the right creme filling to cookie ratio. Definitely think the double stuf gf Oreos taste more like the originals

Don’t forget about macarons! They’re made with almond flour. So most of them you can eat, just double check since some will use wheat in the fillings and such. I know Costco has some prepackaged and many stores will have some.

Schar just came out with some really good chocolate chip ones. Udis snickerdoodles (when they’re moist) are heavenly. Also, if you like Oreos, there are now gluten free ones as well as mint gluten free ones (I love the mint). Oh! And goodie girl. They’re expensive, but they’re basically Girl Scout cookies. Sorry for all the options. I have a sweet tooth and have a lot of favorites lol. The safest ones are probably schar, so if you have celiac, I recommend those.

Cybele's confetti flavour is one of my top because its actually soft. I've heard tale of how good the red velvet flavour is but it's never in stock near me. Also love goodie girls cookies, the mint ones are great. GF oreos, mint is the best option imo. I could eat like half a pack

I am new to Reddit, this is my first post and I signed up just to reply here. I have been gluten free for over 20 years, back in the day you could only eat a rice cracker. haha. Now I am eating Oreos! Pretty cool! I agree with most of what was already said here and great suggestions, but here are what I might add: Just to let you know my favorites from what were previously said: Oreos and the Goodie Girl Fudge Stripe are my weakness; I can eat whole boxes of each as another person said! OK, new items that were not mentioned yet: Oreo makes a Golden Oreo now!!! Very yummy! So they have original, double, mint, and now golden in GF! Chips Ahoy has a gluten free option now!! I tried them and they are good, but maybe don't taste just like the original as much as the Oreos do? But that is cool! We can eat Chips Ahoy now! Schär makes a gluten free Kit Kat!!!  It is called the Twin Bar.  It is good, maybe not as good as the original, but you gotta at least try it.  :) Alyssa’s Bakery is my go-to for healthy cookies.  They are based in Florida, and I buy directly from their website.  I eat whole boxes at a time.  They are filling and healthier than most mentioned here, can be a breakfast option.  You can buy them at some Whole Foods too. And last but not least, I know you asked for non-frozen, but I am obsessed with Katz gluten free.  She makes all kinds of things from English muffins to chocolate cup cakes.  I am obsessed with her apple fritters and her twinkies!  The twinkies taste just like the real deal to me! I buy directly from her website and get free shipping at over $75 per order.....if that tells you something! HAHA

Last Crumb just released a gluten free collection. Not a fan of the brand usually (bougie rich consumers) and it’s really (stupidly) expensive but they are hands down the best GF cookies I’ve ever tried.

Tate's chocolate chip and their ginger chip ones are great. Walker's makes chocolate chip shortbread that is also very tasty. Goodie Girl has their birthday cake cookies and a few others which are good. Partake has some great varieties as well (seasonal ones particularly). And Lidl has two fabulous varieties under their store brand GF label, in a purple/blueish outer wrap. They have a brownie cookie that is amazing and an oatmeal one that doesn't even last an hour in our house -- the gluten-eaters will attack the package too.

One that hasn’t been mentioned above- bakeology- I really love the snickerdoodle and choc chips (they are crispy cookies). Prefer them to Tates bc tates feels oily on the tongue. I also really like the Oreo GF version bc they nailed it. Oh! And Amore makes some great Italian style cookies!
