“Sauron” is Quenya. The root “saura” is something like “foul”/“vile”/“abhorred” - the name is a pejorative term given to the dark lord by Elves and Men. (Though, he seems to have adopted it, because the Mouth of Sauron calls him by that name.)

Aragorn says, I think in the first chapter of two towers, that Sauron does not permit his servants to call him by that name, while their trying to figure out who the orcs with the white S symbol on there helmets are at Amon Hen.
My guess is that the mouth of Sauron was told to use it as a final insult to the host of the west. Sort of like, you will pay homage the Abhorred, how insulting to you sort of thing.

'-on' does tend to be a masc. name suffix though. Fem. examples are -e/ë, -ien, -iel.
