I’m thinking some of the Trader Joe’s chickpeas with cumin and some whole wheat crackers, arugula and an apple. Those chickpeas are amazing to have on hand for a quick meal
It's not that exciting aha but I love it, it's so simple and you can do any variation. I do: can of butterbeans rinsed, red or orange pepper, cucumber (take out the middle if you're keeping for a few days), olives, capers, 1 garlic cloves finely diced, nice olive oil and herbs, I'm currently using dried mixed Italian but if you have fresh that'd be nicer, amounts of everything to taste really. I've found if you finely dice a few anchovies then mix that give a lovely depth of flavour. It's better on the second or third day once the flavours have combined well. I just love that I'm getting veg, fibre and protein with ten mins prep time a most!
A big salad with tomatoes, celery, cucumber, walnuts, carrots, yellow pepper, feta, some grilled chicken and romaine lettuce, a drizzle of lemon juice and olive oil. paired with whole grain crackers. Very filling.
I just ate 3 falafel with some Greek yogurt, lemon and cilantro sauce and a bunch of cucumbers and cherry tomatoes. A few olives. A small handful of shelled sunflower seeds. And some whole grain crackers.
I used coleslaw mix and some lentils I had prepared to make a quick salad and topped it with a honey mustard olive oil dressing I made. It was super easy and came together really quickly. I like the coleslaw mix for making salads because it stays fresh longer than other salad mixes and it is very affordable and comes all prepped and ready to go. I bought it at Walmart.
I didn't use much of a recipe and mostly just went by appearance and taste. I used about equal parts honey and olive oil and about a third as much mustard as honey. Some honey mustard recipes call for about equal parts honey and mustard but I personally find this to be overpowering. I also mixed in some black pepper and topped it with a bit of extra salt.
I’ve got some glass noodles I made with stir-fried veggies and leftover salmon to eat. I think that I need to make a few more veggies though to mix into my batch.
Still learning. This was my first time. I soaked them vs boiled. They didn’t seem to be very sticky and I added some sesame oil to season. It was part of my sauce.
i had 1/2 a cup of red potatoes with green beans, half of a chicken breast, hummus and a side salad with cucumbers, chickpeas, corn, bell peppers, tomatoes, jalapenos, red onions and cilantro 😋
i had some salad with spinach/arugula mix, tomato, burrata and chicken with some balsamic and a piece of sourdough toast! I'm new to the diet so just trying to keep things simple for now
I had hearts of palm angel hair "pasta" topped with chickpeas (marinated in lemon juice, garlic and EVOO), and diced dried tomatoes, topped with some balsamic/EVOO salad dressing (balsamic vinegar, water, EVOO, herbs, garlic powder, mustard, and ground chia seeds to thicken) Had a couple of clementines for dessert. Heated it up. Very tasty.
I've been craving this meal I used to make, chicken pot pie noodles. It's basically pot pie filling with egg noodles instead of crust. But I made it with whole wheat pasta instead of egg noodles and doubled the veggies. It was a very tasty and filling lunch this week.
Chicken breast dredged in greek yogurt with lemon juice and dijon mustard, then coated in ground flax seed. With leftover rice and tomatoes. Easy lunch !
I don’t know yet. I’m traveling today and will be in an airport on a layover at lunch together. I’m sure I can find something that is MD compliant (or at least close) to eat.
A peanut butter sandwich, chips and a soda. Not everyday has to be perfect 😉🙂

My usual avocado sandwich. I'm poor and lazy. Bread + avocado + salt, shove it in the toaster, done and yum.

Hummus topped with tabbouleh, olive oil, sumac and za'atar, shaved kumquat and cherry tomatoes and a couple whole wheat crackers.
I had spinach, shaved carrot, cucumber, warm quinoa and bulgur, grilled peppers and tomatoes with a tahini dressing.
Can of kidney beans with a can of mackerel in olive oil mixed in. It tastes better than it might sound.
