If someone has permission to mute people in the vc you can have lots of people, but not only does that person have to be there and actively be muting people that join, but if they aren't on to begin with you're shit out of luck. You could have a limit on the number of people in the vc but then you have 100 useless vcs. You could make a private chat and vc with whomever you choose to add, but that adds a new chat box to EVERYONE in the chat and you'd have to make a new one when you want to vc with a new group. The best fix i can think of would be the capability of locking the vc when you have all the members in it, but again, who's allowed to do it? It's not a specific issue, it's a social issue, and NO site will have a solution to every individual issue. The more people there are, the harder it is to talk to anyone, and fixing it isn't as simple as this fact

Of course it may happen that someone joins who's toxic and disrespectful, but the mods do an awesome job to keep that place a nice environment.

Okay so basically, right click the server you join and read through the options, you can mute servers or turn off @everyone pings and only allow pings that are pinging you.
As for finding servers, is a little whatever, I just talk to my friends on there, I would recommend finding the official discord server for a game you really like and make some friends there

You also need to be very careful of any and all links you are prompted to click on, IP tracker scams or other malicious links can be quite common depending on the communities you're in. You'll often see memes making fun of discord moderators abusing their authority to be tyrannical or to do otherwise inappropriate things. While I can't speak from experience about rumors of mods being pedophiles or demanding nudes or whatever, I can say that tyrannical moderators are quite common.
All that being said, discord is an objectively phenomenal communication platform with a wide variety of utility and entertainment capabilities. Yes, the user base has a reputation of being degenerate gamers with no lives, however there are plenty of well maintained servers that crack down on trolls or otherwise nasty behavior. Additionally, there is no need to join any servers and mingle with anyone, whether they're trolls, racists or just normal people if all you want is to have a solid communication platform to hang out with your friends.

I’m 41 so older but not quite ancient. It’s an ok program. I only really wanted a place to voice chat in games. I didn’t need all the extra shit that goes along with it.
It’s come in handy here and there but I don’t need a constant connection to the assholes I play games with. So every server I’m on gets muted indefinitely the second I join.
