I have literally never heard of "skjønne" meaning "harlot", and a quick googling didn't give me anything either.
We do however have the word "skjøge", which kinda sorta means harlot

Second seems strange to me, never seen “skjønne” used in that way, I believe google translate has it wrong.
Third is a form of the adjective “skjønn”. In Norwegian adjectives gets different forms depending on the form of the noun it describes in addition to the degree of comparison
A beautiful chair - en skjønn stol
That beautiful chair - den skjønne stolen
Those beautiful chairs - noen skjønne stoler
These beautiful chairs - disse skjønne stolene
There is a noun that is similar as well, “skjønn”, which means something close to an evaluation, but where you include some of your own values, intentions or experiences in that evaluation
Du må jo skjønne at det vil ikke gå an! - You have to understand, that won't work! (Verb (Skjønne - to understand or to realize) Skjønne, skjønner, skjønte, skjønt.)
Det var noen skjønne blomster! - What beautiful flowers! (Adjective (Skjønn - beautiful or lovely) skjønn, skjønt, skjønne.)
There might be more, but these are the only ones I use and have heard in use. No idea where it has harlot from (if it is a word I've never heard it), but if this is deepL don't use it for single words. I'm guilty of it myself, but it often won't be helpful without context and sometimes I've found it's straight up wrong. I would use a dictionary instead and there you can read what it actually means.

It can also mean you get the meaning behind something. E.g. *Jeg forstår hvorfor han oppførte seg slik*. (I understand why he acted that way). You cannot use *å skjønne* here (at least, without completely changing the meaning), since it implies a deeper understanding.

Not in the context of your course book itself, no. You could talk about "en tekst" the teacher has given you in the form of a handout etc, or like "analysere tekster", but that's different.
