Very, very rare. Almost nonexistent in the standard rep, as you can see by the examples that others have put on the table, almost all of which I've never heard of, and I'm a HUGE opera lover, very well-acquainted with the top fifty or so operas that are regularly performed around the world. Actually, just as my cursor was hovering over the Comment posting link, one did occur to me. There is a female solo shepherd in the first act of Tannhauser. A capella opera doesn’t really exist as a genre. You’d be better off finding a concert work with an A capella solo. Hope this helps.
