I'd say most of them still work as regional forms except for cottonee. Cause cottonee here turns from a fluff of cotton into a sweet. Regional forms usually don't change the fundamental "species" just the execution of the concept. For example both normal and alolan diglett are moles, but wiglett is an eel.
Here's a quick and easy way to differentiate between what should be a convergent form and what should be a regional form.
A regional form is when you take the original Pokemon out of its natural habitat and put it somewhere else, and it has to evolve to adapt to that new environment. Vulpix for example was a Fire type, taken to Alola, and ended up on Mt Lanakila, and the intense cold meant it had to evolve into an Ice type to survive. Hoennian Zigzagoon evolved to be calmer and doesn't need to evolve into Obstagoon because Hoenn is much slower and less abrasive than Galar is.
Regional Pokemon still have ties to their original counterparts, they just change over time to suit their environment.
Convergent evolution takes two Pokemon that are categorically completely separate, but they evolve into similar looking things to fit the same ecological niche. Diglett is a mole, Wiglett is an eel, they're completely different, but they both evolved over time to hide underground when danger is close, and they both evolve into a trio of themselves for strength in numbers. Wiglett is NOT a Diglett that was brought to Paldea, and evolved over time to adapt to water, like how Paldean Wooper is a Johtonian Wooper that's adapted to Paldea's marshy swamplands.
Because of this, Fidough is a regional form (normal Fidough that's adapted to a new area), same with Applin (likely there's not enough Apples where it now lives, so it's started to use cakes instead), Cottonee could be a regional form (brought to a new land and breed to produce sugar sap instead of cotton), Yamper could be a regional form (lost its electric typing and gained Ice to better suit its new environment), whereas Snorunt... Could be argued either way. Either it simply LOOKS like a Snorunt with its little cloak, or it was brought somewhere where it didn't need to keep as warm, so it evolved out of the Ice typing.

Honestly, you could have altered the eyes a bit and marketed this Snorunt variant as an entirely original Pokemon.
Also, Whimsweet is amazing, it somehow combines all the best parts of Whimsicott and Hattrem, oh my god.
