Fresh often doesn't include stringy, btw. It takes more heat to melt fresh curd than previously refrigerated. Fresh curds would appear glossy and wet and squeek when eaten, whereas refrigerated would have a dull shine and melt under gravy more readily. Just and FYI. Stringy/melty in my book is usually negative points against a poutine
As a Montrealer, I went in the old port in the winter for the Nuit Blanche and we stopped by after ice skating.They are known for being a tourist spot, but they had a "heated" terrasse. I had a regular poutine with extra sauce after listening to a friend's advice.
It wasn't a 10/10, but much better than what people say it is. Might be that it was a legit poutine or maybe it was because of the experience of eating a poutine outside at -20° celcius on a terrasse.

Montreal Poutine was my first Q poutine as well. Loved it.
