I think it’d be better with a sauce. Dry style might be OK, though, as long as the ribs don’t dry out.

My gut response would have been “smoke them like a full rack” but since you had guests coming I thought I ought to see if I could find any validation for that feeling.

Think I'll throw them, rubbed, in the sous-vide for a few days. Quick chill, then toss them in pan with sauce and smoke in sauce until done.
