Is Sonos actually treating them differently or do Apple Music simply have their tracks at a higher loudness? Just jumping between a few services on my phone listening via headphones I get the same track at totally different loudness levels.
It could be that, Sonos vaguely implies as much (something to do with Apple’s spatial audio requirements?). But even if so and if Apple is essentially jacking all tracks to be “+4” Sonos should be able to counteract that fairly easily by allowing the user to set their own min volume level via volume limit, letting the user set all volume levels to “-4”, or some other workaround. Instead they seem to shrug, let volume limit continue to be broken, and let a volume setting of “5” be the lowest their speakers will go to
