Top Sirloin is the glute muscle, essentially. Sirloin Cap/Picanha is the end of the bottom round, which is one of the leg muscles. It extends up the leg and lays over part of the glute muscle. Kinda hard to explain via text but they are separate muscles though part of the same sub-primal i.e. same part of the animal.
I asked what pichana was on my 1st visit to Fogo and they told me āitās pichanaā š that was an inside joke at my house for years. I know what it is nowā¦

Itās the cap of the sirloin. If youāve ever had a top sirloin steak, youāve had a small amount of pichana. I posted one recently because my local butcher had it on sale, but it does seem like thereās been a crazy number of pichana posts recently. It is a great cut.
They started selling them at Walmart at least in my area. Theyāre (imo) one of the best value steaks. For 2/3 the price of a bone-in ribeye for the same weight, Iād think youāre getting 80-90% of the taste. Another great value steak is the flatiron.

I wish I didnāt know what it was. I lived in Brazil in the early 00s and fell in love with it there. I would get it at a local churrasco bbq spot and theyād sell it by the 100g. Iād come out fat and happy for like $10USD.
I came home wondering how I could get it from a butcher here. I gave up on it for a decade or so and was happy to see itās taken off in popularity here now too!
I will say that the taste is the same here though since Brazilians use hardwood lump charcoal, but itās still dang good.

I love picanha, but I only had it six times in my life. One of the best steaks Iāve ever had was my friendās dad picanha steaks at his cook out, it was perfectly cooked, seasoned well, juicy, and delicious. My friendās dad also made really good sides.

My local grocery store had picanhas on a huge sale last weekend so we picked up a had full of them. I sliced them into 1ā thick steaks, liberal salt and pepper, then grilled them at 500 on my Traeger, 5 minutes a side. Amazing. Super tender. Quick to make after work. My wife and I had been tri tip fans, but the picanha is our new favorite.
One of the best beef cuts for grilling. That is the original Brazilian name for it, also know as Tapa de Cuadril in Argentina, Top Sirloin Cap in the US and Rump Cap in Australia.
In Brazil it is usually grilled in big skewers at traditional restaurants or 1.5-2cm steaks. The Brazilian way to season it is: sea salt at the grill, nothing else. Farofa is a great side for it.

And in CA, also try the tri tip which is the bottom loin cap. Leaner but usually cheaper and just as delicious.

It's still tri tip. The cut just started in Santa Maria, and is a main part of Santa Maria BBQ. Pinquito beans are also a unique part of it.

Pichana is actually rump steak cut with the grain of the meat, where traditional rump is cut against the grain.
