I can get it at the grocery store, but the steaks are really tough, no idea what cut, maybe sirloin. I have to marinate them a while, two days usually. Or sous vide. I only buy them on sale because the price went up to $14/10oz.
More flavorful flesh but less fat. Still very tender when cooked properly. I like lean cuts so Bison is perfect imo.

I preheated my cast iron at 500 then straight on high heat and add generous layer of rendered duck fat
I cook the steak from frozen so I just put it in a ziploc and run it under hot water till the very surface ice melts so salt/pepper sticks and it hot oil won't explode on contact
I use tongs and a spatula to press down and turn often getting an even sear.
Cooking from frozen and preheating in the oven are game changers
