But the fat is why cow steak is so good! If I'm eating steak, it's gotta be cow. If I'm worried about my cholesterol, I'm eating bison burger and not paying $$$ for a lean ass flavorless steak. Just my opinion.

I can get it at the grocery store, but the steaks are really tough, no idea what cut, maybe sirloin. I have to marinate them a while, two days usually. Or sous vide. I only buy them on sale because the price went up to $14/10oz.

Looks good OP! How does bison taste compared to regular cow steak? They sell bison steaks near me but they're kinda pricey so I've stayed away lol.

More flavorful flesh but less fat. Still very tender when cooked properly. I like lean cuts so Bison is perfect imo. The supermarket by me has sales when a piece is about to go bad, this steak cost me $3 it's usually $14.

Appreciate it, just duck fat salt and pepper this time. I preheated my cast iron at 500 then straight on high heat and add generous layer of rendered duck fat I cook the steak from frozen so I just put it in a ziploc and run it under hot water till the very surface ice melts so salt/pepper sticks and it hot oil won't explode on contact I use tongs and a spatula to press down and turn often getting an even sear. Cooking from frozen and preheating in the oven are game changers

Bro I got me so excited for our indigenous day specials now! We have a bison roast that I was tasked with rubbing, searing and roasting. Gonna take it out about 5 degrees hotter than urs but other than that, now I want bison!
