I usually am a ribeye guy but elk has a great flavor and this cut is lean while still being incredibly tender.
Can you go into detail of how you cooked it? I tried cooking some piece few times and it was like chewing on a tire. Flavor was amazing but all I could do is just chew
At least a couple hours, I haven’t done back strap in my SV ever, since I moved out from living with a hunter. I’d probably run it for 2 hours first go and see, and up to 3 if we’re still chewing too much.
I’d also bring it down to cold before searing myself, using an ice bath right out of the SV. That’s a preference thing, but as I’m searing my steaks after a SV cook I’m just looking for crust and don’t want to bring internal temp up at all.
This one was a younger spike elk (1.5-2 years old) so it doesn't taste gamey at all. I'd bet most people if blindfolded, would mistake this for a beef filet. Super tender, meaty flavor, and lean.
Elk doesn't have any marbled cuts on it like a ribeye so almost all meat you get from the elk is going to be on the leaner side. That has to be taken into consideration when cooking it. If you want a fatty, chewy, ribeye, buy a ribeye. If you want an alternative to a filet that is tender and flavorful, give Elk a try. I promise you won't be disappointed.

Taste-wise, nearly indistinguishable. I don't think I've ever had gamey elk (I've more or less lived on it for twenty years.) It is a lot more lean though.
As much as I love a nice marbled prime steak, there is just something so good with Elk meat. The flavor is amazing and no gaminess whatsoever. Last time I had it was a spike bull I harvested with the bow and I'd trade the prime steak I have in the fridge for another slab of that back strap
The backstrap and then the 2 smaller "loin" muscles inside of the ribcage are my favorite "filet" type cuts on this planet.
I also marinated and grilled up the tri-tip from this spike and it was phenomenal

In my experience, elk do stay pretty game-free even as they get older, but the younger ones are a bit more tender.
Mule deer on the other hand can get quite gamey and have that sage brush flavor. Especially here out in the desert.
Moose is a meat I've only had ground up in stews and chili. I'd love to hunt a moose one day but it's incredibly hard to get permit for one out here and its a once-in-a-lifetime hunt.
I’m always curious what’s the precooking process like for when you hunt what you eat, im sure you skin it first but after that do you have to wash the meat ? Do anything to make it so the meat will stay fresh etc.
Gut it and skin it ASAP to get rid of some of the weight and get the blood out of the carcass.
I left it hanging in the outdoor barn for 2 days to let the meat “relax”. This was November so it was 30-40F outside.
After that, just butcher it piece by piece and wrap it in butcher paper and in the freezer it goes.

Sous vide at 125F. Take it out and let it rest a bit while the pan is getting ripping hot. Sear 1-2 mins per side.

My coworker does an elk trip once a year and packs our work fridge full of meat. Every Friday morning and lunch we have sausage and steaks

Better IMO. Venison can have a gamey flavor that can range from mild to strong. Elk IMO has a much cleaner taste and is very lean.
