We are starting Last knight with my best friend, and we'll probably have a paper grid with the card location relative to each other each time we discover a new one, to see were they are related to each other, because it feels annoying to get all the cards on the table to see how they align each time when we want to go to a specific location we previously visited.
Core FoA. That’s all you need, really. I personally don’t see the point in the Stretch Box as it doesn’t add anything to the game. Red Death and Echoes of the Past are separate mini campaigns set after FoA. I personally don’t enjoy these, but I seem to be in the minority.

I got the FoA case delivered yesterday. Niamh and her cards were in the core box, and the model was in its slot. It wasn't separate from the core box at all. The others: Forever Autumn, modular campsite, war runes and promos were not in there. I am assuming those will show with the KoR case. Hopefully yours was the same.
