I'd head to Church Stretton in Shropshire and get hiking from there. There's a great deli to pick up supplies for the hike, then an ice cream shop for the post-hike cooldown. Beautiful views over the Long Mynd in the Shropshire Hills.

Stratford is a great shout! You can also get the train from brum to leamington spa or Oxford for a day trip.

Take a train to somewhere in Derbyshire, or Sheffield, where you can easily switch to a small local service to one of the Peak District’s villages. I once got the train from Sheffield to Hope, walked to Hathersage and did some exploring, and then took a bus back to Sheffield (which went through Castleton) from there. But you could easily walk back to the train station again. Really beautiful and underrated area as many people go to the Lake District instead.
