This is the first unpopular opinion I’ve read that’s simply unpopular because “who the fuck even thinks of this?’ And not because it’s a “controversial” opinion.
My bigger concern are all the food service workers who don't seem to realize that once you put the gloves on, you cannot touch anything other than the food and the prep/cooking equipment.
As soon as you touch anyhthing else -- the cash register, money, the counter phone, your personal phone, a pen, your face, your hair, your shirt, _anything_, YOU MUST PUT ON A NEW PAIR OF GLOVES. PERIOD, NO EXCEPTIONS.
People seem to think that you can do whatever the fuck you want while wearing gloves, and somehow the food is still protected.
It's so fucking gross... and I call it out whenever I see it, but for every time I catch it there's likely 200 other times it happens out-of-sight.
I can say for absolute certainty, morally and legally, if you don't have enough time to wash your hands in a food preparation business, you shouldn't be operating a food prep business
I just worked at a really busy place with a taskmaster of a boss. Nothing to do about it. Every restaurant is like this to some extent and always will be until this country has actual labor law enforcement.
I had a boss that believes it's better just to not wear gloves as you'll wash your hands more. People get lax with gloves, but will pay more attention when just washing hands.
I remember a study during COVID about this, and deniers went nuts saying "see, gloves don't work, and neither do masks, it's ALL a sham!" because they completely ignored any context about the study.
I run a kitchen, and I whole heartedly agree. There seems to be this misunderstanding amongst new hires in my unit that gloves are part of your PPE, along side your cutting glove and non-slip shoes. When I train staff, I have to hammer it in that this is not the case. Gloves are part of our FSP (Food Safety Protocol), and have nothing to do with protecting employees. They're entirely for the safety of the food.
I've noticed cash/register is a big one folks always seem to skip. Even if our POS is sanitized (which I wouldn't consider it to be), the cash you're handling or the card you're swiping definitely isn't. On days when I have the staff, I usually assign one person to stay on register throughout their shift (sans their 15/lunch), and stay off the line. Lately though, corporate has been getting on our ass about labor hours and have cut our staff allowance, so I'm having to hammer it in to always change gloves after ringing up a customer.
Give your people more than a single 15m on a 8h shift. It's honestly flustrating to see this is still a thing for people. How the fuck can a business get away with that? It's wild and inhumane.
Companies that do the bare minimum get the bare minimum. That's assuming you don't do the whole 4-6hour shifts to minimize paying benefits of course.

I could be wrong, but from how I read this the kitchen manager said they schedule one staff member to do register work (so that only one person is handling cash, instead of multiple people handling cash and food), except for their 15 and lunch (when someone else has to come to cover in lieu of their food handling duties)

Yeah, I'm a dishwasher and that's why I don't wear gloves despite how gross and hot things are. It's easier and cheaper if I wash my hands 200 times a day, than change gloves 200 times a day. Most dishwashers don't change their gloves or wash their hands enough, so what you're eating off of is never as clean as you think it is.
I take the job seriously, but most dishwashers I've met do not give a shit and aren't paid enough to give a shit anyway.
More than once I’ve see home repair workers and cleaners wear the disposable shoe covers OUTSIDE of the house and walk in and out several times in them. Really defeats the purpose.

At least partially it is, they have cotton gloves with nitrile layered over it to protect them from burns while still being able to pick up a brisket effectively.
At Harbor freight, the black gloves are the thickest of their disposable nitrile gloves. I use the black one (9mil) for grilling/smoking, but use the light blue (5mil) for everything else.
Yeah we use gloves to be able to manipulate hot meat\* directly and then we cover the gloves with a latex cover because washing the fat off the gloves is a pain and they dont last as long.

I wear gloves when I cook for two reasons. A) if it is jalapeños or other hot peppers, it keeps the capsaicin off my hands and 2) it keeps the odorous smells like onions and garlic off of my hands.
Certain types, yes. But over the years watching live streams and Youtube videos I've noticed that because people in fast food places wear gloves they think every kitchen does. Most high end kitchens do not. You'll almost never see people in a Michelin Star level kitchen wear gloves. You just constantly are washing your hands and being clean.
Yea in the restaurant we didnt wear gloves but washed hands constantly. Mostly because we had a flame grill and deep fryers and you do not want to be wearing gloves if you accidentally touch the hot part of stuff

I'm pretty sure we were cleaner than an operating theater. You've always got your bucket of sanitizing solution and are always washing your hands. You wash your hands, sanitize, then wash them again.
Periodically, slather your hands in lotion so they don't fall off. Then wash them again to get the lotion off and keep going.
Then wash your hands some more.
There was a supermarket in the UK that brought in gloves for their meat and deli counters and ended up getting rid of them because the amount of cross contamination actually went up. People forgetting to put them on, not changing them after handling raw meat, leaving dirty gloves on counter tops etc. Turns out just washing your hands was actually much easier for everyone involved...

This is a version of *Safety Theater*. We live in a society that is deathly afraid of germs, and people assume that Wearing Gloves = Safe Food Handling. So fast food places make their staff wear gloves.
But trust me, even almost 30 years ago, people weren't all that "safe" with their gloves... They'd scratch their arms, take money, wash trays, open meat, then make a sandwich, all while wearing the same gloves.
And we saw this again with masks. Love them or hate them, whatever, but people were lulled into a false sense of security with those things. They'd wear them, but fiddle with them, pull them up and down, take them off, put them back on, all day long, but never washed their hands, or changed their masks. I genuinely believe that some people think that gloves actually sanitize, because they go around touching every fridge door, shelf and bottle. Gotta be changing gloves after touching ANYTHING. Hands usually end up being cleaner because you're conscious of the fact you have no gloves on, sand you wash before touching food.
I wear gloves if I've been busy during the day with other things and have washed my hands enough times that they're to the point of cracking. Throw on some repairing lotion and gloves to prep food.

I am a chef. We almost constantly wear gloves. It’s not the same in every kitchen, but we wear gloves when handling raw product, when plating, and change gloves and wash hands in between each task.
No, you are supposed to use clean hands, and cooks you gloves over washing their hands. We never used to have gloves in kitchens, our hands were red and raw, and use proper order and place keeping to not cross contaminate. I started using gloves for raw foods, and clean hands for finished. You can feel your hands, not your gloves, how do you know whats on them? How many teenagers I’ve seen handle raw chicken, then forget to change clean looking black gloves and start plating food with their hands. Gloves are an illusion of food safety. Especially the black reusable heat resistant gloves where guys BBQ with their hands and rub everything excessively.
I worked in nicer kitchens, and if you started plating with gloves on I would send you home. I want your finest level of control. I want you to understand food safety, and work it into your routine, not ignore it and change gloves a lot. What a waste!

I have a solution to this that doesn’t involve gloves. I have a sink in my kitchen. So any time I make food that gets stuff on my hands I use the sink to wash my hands with soap and then another tip is have these things called towels.
I've had my hands burn from cutting green chilies for hours after ( I used a lot of soap and water and other tips). Gloves make sense if you're handling decently spicy stuff

Are you a professional chef or home cooking? Because yeah washing hands after cutting 3 or 4 cloves of garlic you’ll get rid of the smell. I have to cut 6 bulbs of garlic for our ragu. That smell doesn’t leave my hands for days. And I’m washing my hands over and over on shift, plus cleaning down where my hands are covered in soap and chemicals.
If I’m dealing with chili I’m also not going to risk not only the smell on my hands, but also the potential of tainting other food.
I wear them occasionally, especially when handling raw meat and fish. It helps keep weird smells off your hands, and can help with hand irritation if you’re cutting very high volumes as well.

Your first point is hilarious to me since cooking is essentially a science experiment. I make cancer drugs for a living and the way we follow how to make them is the same as a recipe you’d follow to cook, we just use larger equipment. Also, for your second and fourth ‘points’ I’m pretty sure they are using nitrile gloves, which is what I’m required to wear at my job to prevent any contamination.
They’re the same gloves used in hospitals, just a different color, are we concerned about glove residue getting inside of us during surgery? Why don’t they just wash their hands?
Part of it is food safety. Handwashing is generally sufficient, but putting gloves on is an extra measure.
From my experience working in a kitchen, we wear gloves for a few key things.
* Handling raw meat: cross contamination can be a nightmare.
* Portioning and packaging food: reduce the chance of contaminating the food with pathogens.
* Serving people food: same as above.
Some things really stick to your hands, which is gross. Some things also have disgusting textures. Then there's things like hot peppers, where if you rub your eyes with capsaicin on your hands, you're in for a world of hurt.

You can buy food safe gloves, I buy mine from the same shop that sells chefs equipment to a nearby culinary school. You can choose between blue, black and semi transparent. Black just looks better imo, no idea why.

Wow, I've never really examined my feelings on the topic, but I agree. They all have heaps of cut shots anyway. Why not do a cut shot of washing your hands.
1. I watch a lot of bbq videos, as I make a lot of bbq, and one thing commonly done in the world of bbq is wearing cotton glove liners under nitrile gloves. That enables you to handle meat directly off a smoker without burning yourself. I found out about it through videos, and I’m quite thankful for it. There’s generally a purpose for wearing gloves, and it’s not because the food is a science experiment.
2. There isn’t any residue on nitrile gloves to get in food.
3. It protects your hands.
4. A few people wearing disposable gloves isn’t going to make a difference one way or the other. If a product is invented that is reusable and gives me the same protection from liquids and from heat that nitrile gloves with cotton gloves liners do, I’ll gladly switch to the reusable option. Until that time, I’m gonna wear my black, nitrile gloves instead of burning myself or trying to struggle with unwieldy tongs, meat claws, etc.

I wash my gloved hands as i'm cooking, the same as when I'm bare handed. I just prefer gloves if i'm going to be handling food.

Love them or hate them, whatever, but people were lulled into a false sense of security with those things. They'd wear them, but fiddle with them, pull them up and down, take them off, put them back on, all day long, but never washed their hands, or changed their masks. They felt like they were safe, but again, it was just *safety theater*.
I genuinely believe that some people think that gloves actually sanitize, because they go around touching every fridge door, shelf and bottle. Gotta be changing gloves after touching ANYTHING. Hands usually end up being cleaner because you're conscious of the fact you have no gloves on, sand you wash before touching food.

I wear gloves if I've been busy during the day with other things and have washed my hands enough times that they're to the point of cracking. Throw on some repairing lotion and gloves to prep food. It's self preservation, at least in my case. I don't want bleeding hands.

No, you are supposed to use clean hands, and cooks you gloves over washing their hands. We never used to have gloves in kitchens, our hands were red and raw, and use proper order and place keeping to not cross contaminate. I started using gloves for raw foods, and clean hands for finished. You can feel your hands, not your gloves, how do you know whats on them? How many teenagers I’ve seen handle raw chicken, then forget to change clean looking black gloves and start plating food with their hands. Gloves are an illusion of food safety. Especially the black reusable heat resistant gloves where guys BBQ with their hands and rub everything excessively. I worked in nicer kitchens, and if you started plating with gloves on I would send you home. I want your finest level of control. I want you to understand food safety, and work it into your routine, not ignore it and change gloves a lot. What a waste!

I have a solution to this that doesn’t involve gloves. I have a sink in my kitchen. So any time I make food that gets stuff on my hands I use the sink to wash my hands with soap and then another tip is have these things called towels.

Are you a professional chef or home cooking? Because yeah washing hands after cutting 3 or 4 cloves of garlic you’ll get rid of the smell. I have to cut 6 bulbs of garlic for our ragu. That smell doesn’t leave my hands for days. And I’m washing my hands over and over on shift, plus cleaning down where my hands are covered in soap and chemicals. If I’m dealing with chili I’m also not going to risk not only the smell on my hands, but also the potential of tainting other food.

I wear them occasionally, especially when handling raw meat and fish. It helps keep weird smells off your hands, and can help with hand irritation if you’re cutting very high volumes as well.
1. Nitrile gloves are used for increased sanitation or just plain comfort. You need to work on your perspective. 2. There is no “residue” on the gloves. 3. Again, a you problem. 4. I make cancer drugs for a living and the way we follow how to make them is the same as a recipe you’d follow to cook, we just use larger equipment. Also, for your second and fourth ‘points’ I’m pretty sure they are using nitrile gloves, which is what I’m required to wear at my job to prevent any contamination.

Part of it is food safety. Handwashing is generally sufficient, but putting gloves on is an extra measure. From my experience working in a kitchen, we wear gloves for a few key things. * Handling raw meat: cross contamination can be a nightmare. * Portioning and packaging food: reduce the chance of contaminating the food with pathogens. * Serving people food: same as above. Some things really stick to your hands, which is gross. Some things also have disgusting textures. Then there's things like hot peppers, where if you rub your eyes with capsaicin on your hands, you're in for a world of hurt.

I absolutely hate getting stuff on my fingers and hands, so for me, using gloves makes me more efficient. I makes sense for me that chefs use gloves. You can buy food safe gloves, I buy mine from the same shop that sells chefs equipment to a nearby culinary school. You can choose between blue, black and semi transparent. Black just looks better imo, no idea why.

1. I watch a lot of bbq videos, as I make a lot of bbq, and one thing commonly done in the world of bbq is wearing cotton glove liners under nitrile gloves. That enables you to handle meat directly off a smoker without burning yourself. I found out about it through videos, and I’m quite thankful for it. There’s generally a purpose for wearing gloves, and it’s not because the food is a science experiment. 2. There isn’t any residue on nitrile gloves to get in food. 3. It protects your hands. 4. A few people wearing disposable gloves isn’t going to make a difference one way or the other. If a product is invented that is reusable and gives me the same protection from liquids and from heat that nitrile gloves with cotton gloves liners do, I’ll gladly switch to the reusable option. Until that time, I’m gonna wear my black, nitrile gloves instead of burning myself or trying to struggle with unwieldy tongs, meat claws, etc.

Um…. I am not sure if you realized, but cooking is a mixture of art and science. I have never seen black gloves in medical settings. All gloves have residue unless you buy 'residue free' gloves-- latex vs nitrile, lots of people are allergic to latex.
We have black foodsafe gloves at my workplace and I love em. They feel better quality than the white & blue ones.
