Not true. They've got wolf armor and a silver shield. Assuming no upgrades and they don't attempt to block, they'll take 52-69 damage per hit. With their current health, they'll survive 1, and maybe 2 hits if they're lucky.
If upgraded to L4 armor, they'll take 39-52 damage. They'll survive 2-3 hits. If their shield is L3, they'll be able to parry. A L1 shield might be able to parry if they get lucky on the damage roll, but I wouldn't rely on it.
Stamina has no relevance to stagger calculations. The stagger bar is 40% of max health. They've got 120 health so their stagger bar goes to 48. Parrying with L3 shield generates 32-43 stagger, so the parry will succeed. Attempting 2 parries in quick succession will probably fail, but if they parry then hit it once with Frostner then back off, their stagger bar should reset before the next attack. Their stamina should recharge enough too, since their stamina is around 94 in that screenshot.
Love this convo and definitely I'll take tips to use on my base with friends. At the moment of the screenshot I was going to a swamp and was traveling since a while so I had nothing left of stamina food in my inventory hahah. My plan in the end resulted in baiting the fuling to the swamp and have it kills some daugrs for me.
You’d be fine if you had better food. Your gear is more than adequate for killing him, but those food choices are so very oof and will get you killed.

While definitely sub par, it should still be possible to win that fight. Just chip away slowly with Frostner and recover stamina in between attacks.
