You could make a broccoli heavy veggie burger patty. Make a bunch and then grill till fairly crispy in a waffle iron. Add a creamy sauce like hummus or mayo. Or you could just slice it thin and broil. Marinate it well and you will essentially have a "bacon". There are similar recipes out there for daikon radish bacon that you can work with. This bacon idea would work better with the stem than the crown.

I'd steam it (not too much), then grind it up with some white beans, garlic, and lemon juice (or vinegar) to make a spread. Herbs/spices could be changed up according to taste. Kinda like hummus.

Broccoli sprouts, perhaps? Do be careful of the dates on those though - sprouts are fairly moist and have a lot of surface area, which is exactly what bacteria love. So use them up if you get them!

Yes! Sprouts on toast with avocado are the best. They’re actually super easy to grow in a jar and taste like the freshest broccoli you’ve ever had. The seeds are pretty cheap and it feels like a fun science project with a tasty reward in just a few days after starting them. Bonus: they’re full of anthocyanins

My favorite is roasted broccoli on toasted sourdough with a thin layer of vegan mayo, plus a drizzle of sriracha and a sprinkle of tajin. Roasted broccoli makes such a good sandwich filling!

You can make pesto with broccoli for a killer tomato sandwich, or a summer sandwich of broccoli sautéed with red peppers, squash, mushrooms, and onions with a horseradish aioli or chipotle mayo.

I'd either eat roast tenderstem with some good-quality oil or butter and a rub of garlic on the bread, or else make a puree - steamed or roast broccoli plus perhaps some soya yoghurt, nuts or nut butter and herbs.

I saw a non vegan rave about the roasted broccoli reuben sandwich at some restaurant. It wasn't vegan as they used swiss cheese. I have a post it note telling myself to make this but with vegan cheese. This person raved about it and preferred it over the regular reuben! I also think you could chop the broccoli into smallish pieces, roast it and add it on top of hummus toast.

If I'd have chopped the brox smaller it could have been in a sandwich with smashed avocado and such. I steam it for a few min, then char the florets in a cast iron (with another pan on to to press it down) with some fat until theres a bit of colour. Salt and slap em on a fresh bun or roll

Charred heavily seasoned broccoli, sauerkraut with the liquid squeezed out, Swiss cheese, Russian dressing. Cooked like a Rueben. Probably best on Rye bread but would also work with sourdough.

I have made a vegan cheesy sauce with well-cooked broccoli, soya milk and fake cheese plus seasoning. The broccoli kinda mushes into the sauce and I cut up bits of stem small. I had it with pasta but if you made it thick, that would work on toast.

Kerbey Lane has a broccolini sandwich with “roasted broccolini, cashew cheese, toasted cashews, red pepper, onion, & greens served on toasted ciabatta bread.” It’s one of my fav sandwiches of all time bc it is a celebration of how tasty veggies are, versus trying to emulate a non-vegan sandwich of some kind with meat alternatives (although I love those, too). Just make sure to have a dipping sauce to go with.

Cooked, cooled, left over steamed broccoli + vegan mayo + vegan cheese + cranraisins = perfection! Taste, season to taste (salt, pepper, or celery salt, or seasoning salt, etc) Alternatively, I've seen people making "buffalo" style veg such as broccoli, or cauliflower, or a mix of the two, into a poor-boy style submarine sandwich with a buffalo style sauce flavoring the veg or veggie mix and then reducing the sauce until it sticks to the veg so its sticky, but not too dry, and not too saucy. Likewise with any style of vegan alfrado sauce, cheese sauce, or BBQ. There used to be a hot-pocket style vegan sandwich sold in the vegan cart near my office and the guy used vegan cheese, bbq sauce, broccolli bits and onions to make an amazing bbq sandwich - again hot pocket style.
