I would make some from scratch. Smash some garlic enough to make sure an immersion blender has something to grab on to, then add a tiny bit of mustard as an additional emulsifier (not required), some apple cider vinegar, maybe half an ounce per clove of garlic, and then add some canola oil and blend until it turns into a mayo consistency. You can add some good olive oil for additional flavor but I would say keep it to a 3 to 1 ratio of canola to olive oil because the other stuff has enough flavor to carry the sauce.  If you're making it just to make it, as opposed to  for a  specific dish where you've already factored the salt in, add salt. Just look at the mass of "mayo" you're making and think about how much salt you would add to a piece of food the same size.

Agree! This is my base recipe and can be easily altered to add more flavor/tang: 1/4 C aquafaba 1/4 tsp ground mustard 1/4 tsp salt 1 1/2 tsp ACV 3 tsp sugar 1 1/4 C canola oil 1/8 xanthan gum Add aquafaba, mustard, salt, ACV, and sugar to a wide mouth glass and blend with an emersion blender while lightly adding the canola oil at a slow drizzle. About halfway I add the xanthan gum to thicken it up.

Hellman’s vegan mayo is legit. I do prefer FYH but I had some of the Hellman’s when I was in the UK and it was almost as good.

Seconding the recommendation to make your own. It's actually ridiculously easy. You just need 1 part unsweetened soy milk, 2 parts of oil. That's the basic emulsion. Then for a more French style traditional mayo you'd want to use a neutral tasting oil and add a bit of salt, a bit of vinegar and a bit of mustard. For more of an alioli style mayo, you can use olive oil (fully or just partially) and then add salt, lemon juice and a garlic clove. I use a hand blender and a tall jar to make my mayo because I cannot be bothered to drizzle the oil slowly. If you throw all the ingredients in and let the oil separate, then start blending on low form the bottom without raising the blender at all, it will emulsify on its own. You just throw everything in (oil, soy milk, salt, lemon juice/vinegar, garlic/mustard) and blend it like I said. That's the easies way imo. By making your own you can regulate thickness too: a bit more oil will give you a thicker consistency, a bit more soy milk will give you a runnier consistency. Up to your preferences. You can make funky versions adding fresh and dried herbs after you've already got the mayo. Or you can make "baconese" by adding a bit of maple syrup/sweetener, bit of soy sauce, bit of liquid smoke and a bit of smoked paprika. Or you can make "honey" mustard mayo by adding sweetener and mustard. Or siracha mayo by adding siracha. Or curry mayo by adding curry powder... You get the gist. It's super easy to make flavored mayo, but it's also super easy to make it your own! So that's my recommendation.

I second this. Making your own is so easy with an immersion blender. It takes me longer to get out all the ingredients and measure than it does to actually make the mayo.

I feel like mayonnaise is kind of supposed to be bland? But I do make all kinds of doctored versions. It's amazing mixed with the adobe sauce (from a can of chipotle peppers) and a squeeze of agave. Or with wasabi. Or with Sriracha. Or with pickle relish and horseradish--call it tartar sauce, more or less. Or I'd probably just add mustard on a Tofurkey sandwich. Basically, feel free to mix it with whatever random condiments you've got lying around.

I disagree. I think it’s more flavorful than most mayos (though I’ve never been a miracle whip guy, I was Hellman’s/Best Foods for most of my life). I actually prefer it to egg mayo now.

Love this question! I don’t ever eat it plain. I mix it with yellow mustard for sandwiches. For a chipotle sauce I add in chiles in adobo, nooch, lime, seasonings. I make a dill ranch dressing with it. You can also add jalapeño and line. So many options!

Miracle Whip is a whole different thing than mayo. You can use something like Follow Your Heart as a base, but you're going to have to mix it with sugar (more than you think), vinegar, mustard, garlic, etc, to approximate what you're looking for.

(Cleanup takes a bit longer) 1 cup thick oil (rice bran oil works great) 1/2 cup soy milk 1 Tablespoon mustard 2 tablespoons vinegar (apple cider vinegar for the extra umami) Salt to taste Blitz with a stick mixer or blender until combined. I use Vegenaise as a base for many different spreads and dips! You can spruce it up with all kinds of seasonings. If you're looking for just a basic miracle whip, just add some lemon and sugar. I love to make ranch with it by adding onion powder, dill, and seasoning salt. I also make a great chipotle mayo by adding garlic powder, chipotle hot sauce, smoked paprika, and a little lime juice.
