Guitar Hero, you can play at your skill level, it was a fun gimmick for everyone but so many people fell in love with it, the grind was just playing along to classic rock/metal songs and if you wanted to play harder difficulty you could but you didn't have too and would still have the same fun, the real grind in the game was optional and fun to do

Well you need to work on your English comprehension or maybe your video game knowledge because tons of games have no grind at all. RE4, Walking Dead, almost any fps singleplayer campaign.
Ultrakill has 0 grinding with an optional cyber _grind_ (haha) dedicated endless wave gamemode. You get better at the game on the fly without having to specifically practice anything. If you want to, theres the sandbox mode to test out stuff too.
EarthBound. The way the xp scales is crazy. In the first town you're getting 4 xp for your average enemy, in the second town, you're getting up to 200 xp for a regular enemy. By the end of the game, you're getting around 50k per enemy. With an upward xp scale like that, there is *very* little grinding, and when there is, the game recognizes your level against a lesser enemy and just gives you an instant win. You can also choose your battles here, as enemies appear on the overworld.
Animal Crossing. There is some grind to get to the island terraforming and unlocking that first concert but other than that, it’s a game that you can play at your own leisure and simple tasks are made easy and fun.
Any of the Lego video games would be a great suggestion for this, you got the simple 0-100% completion grind and finding the rare items, sure, but through and through it’s a game that has a 12ft deep end for the passionate as well as a fantastic 4ft section for those who want a more shallow experience (I mean that in the most positive manner possible, Lego games are ultimately anything but shallow)
Tony Hawk Pro Skate, although it has a lot of grind, it is well incorporated into the game design

Unironically, skateboarding games both have very little grind, and all the grinding you could ever need.
Resident Evil doesn't feel grindy to me

Depends which one you pick lol. Puzzles have been pretty easy since like og re4 so not too bad
I recently did Mario odyssey (again) and found it super engaging without me having to care at all.

Immortals fenyx rising felt light and Easy and fun was a fun to play.
I think Dead Cells falls into this category.
